Chef/Owners Jeffrey and Nina Gimmel

Note: A native of the Pacific Northwest, huckleberrys are similar to the blueberry with a taste ranging from tart to sweet.

Fresh Sour Mix

1 scant cup simple syrup
1 cup fresh lemon juice
1/2 egg white (optional)

To prepare the simple syrup, bring 2/3 cup sugar and 1 cup water to a boil. Remove from the heat and cool completely.

Combine the lemon juice, egg white, and simple syrup in a jar. Cover and shake well.

Cocktail
1 ounce vodka
1 ounce Triple Sec
1 ounce fresh sour mix (recipe above)
1 ounce pureed fresh or thawed frozen huckleberries, strained through a very
fine sieve such as a chinois
ice

Chill a martini glass. Place the vodka, Triple Sec, sour mix, huckleberry puree, and ice into a cocktail shaker. Shake well, and strain into the glass.
